High-quality bentonite clay derived from volcanic ash, specifically formulated to facilitate lees sedimentation at the end of alcoholic fermentation. Low deproteinisation properties preserve elements needed for secondary fermentation.
How It Works: Negatively charged aluminium-silicate clay colloid reacts with positively charged proteins, precipitating them from wine or juice. Ideal for fining juice or base wines destined for sparkling wine production or beer brewing.
Applications: Primarily used to remove proteins from white wine and juice. Use sparingly in red wines as it can reduce colour by adsorbing anthocyanins.
Recommended Dosage:
- Juice: 200-1000 ppm (20-100g/hL)
- Wine: 100-500 ppm (10-50g/hL)
- Beer: 300-800 ppm (30-80g/hL)
Usage Instructions: Dissolve bentonite in approximately 20 times its volume of cold water. Mix vigorously to remove lumps. Allow mixture to swell for 6-12 hours. Add to juice or wine during thorough mixing. Settling may take up to 7 days depending on the wine.
