Purpose Removes impurities and by-products from distilled alcohol that remain after distillation.
How It Works Chemically treated and heated charcoal creates an extremely porous structure with 500–1500 square metres of surface area per gram. This porous surface absorbs unwanted chemical compounds and off-flavours from spirits.
Optimal Conditions Works best when alcohol concentration is below 50%. Adjust alcohol level before purification for maximum effectiveness.
Preparation
- Soak carbon in warm water for 10 minutes
- Flush 1 litre of lukewarm water through carbon before use
This removes mineral salts from the carbon manufacturing process. Unflushed salts may enter the spirit and form sediment or haze, particularly at lower temperatures. While not harmful, mineral salt haze is undesirable and can be decanted off after settling for a few days.
Replacement Replace carbon every batch as the pore structure becomes saturated with absorbed impurities.
Industry Context Commercial distilleries such as Jack Daniel's and George Dickel use charcoal filtering (the Lincoln County Process) to significantly improve spirit quality.
