Natural Source Occurs naturally in citrus fruits, with lemons and limes containing the highest concentrations (up to 8% of dry weight, approximately 47g/L in juice).
Winemaking Applications
Acidification Adjusts pH levels during fermentation to create optimal conditions for yeast activity. Balances acidity and enhances flavour profile. Used less frequently than tartaric or malic acid due to its aggressive citrus flavours.
Timing Always added after primary alcohol fermentation is complete, as yeast can convert citric acid to acetic acid.
Equipment Sterilisation
Final Rinse Solution Mix 2 teaspoons (approximately 50g) citric acid with 10 litres of water. Use as final rinse after sterilising equipment to adjust pH and remove alkaline residues from cleaning agents.
